Pancake day may be over for another year but don’t hang up your frying pan just yet. Here’s the recipe for yesterday’s delicious pancakes with whipped cream and blood orange syrup…
For the pancakes…
Whisk in a bowl:
– 2 eggs
– 250 ml milk
– 100 grams flour
Heat the oil in a frying pan until it’s sizzling hot.
Pour in enough batter to coat the base of the pan, don’t worry – the first one is often a bit rubbish so don’t be disheartened! (It just means the pan wasn’t quite hot enough)
For the toppings…
Mix:
– 100 ml double cream
– 30 ml blood orange juice
– 40 grams icing sugar
For the syrup:
– 100 ml blood orange juice
– 30 grams sugar
– A pinch of cinnamon
Eat and enjoy. Flipping marvellous.
